The C-terminally truncated inulosucrase (Inu∆699) of Lactobacillus reuteri strain 121 is a fructosyltransferase belonging to the glycoside hydrolase family 68. This enzyme synthesizes high molecular weight inulin, and a broad range of fructo-oligosaccharides (FOS), constisting of 1-kestose (GF2), and 1,1-nystose (GF3), using sucrose as starting material. The FOS compounds contain both ß(2→1) linked fructsyl units.
