Fructans

  • Levan is a naturally occurring homopolymer of fructose. The C-terminal truncated levansucrase (Lev∆773) of Lactobacillus reuteri strain 121 formes two polymers, a fructan with a length of 0,02 mDA (97 %), and a longer polymer of 3-4 mDA (3 %). The linear polymers contain both β(2→6)- linked fructan units, and a low amount (2-3 %) of branching β(1→2) points.

The branched homopolymer contains mainly β(2→1)-, and  5-7 % β(2→1) glycosidic linkages.
