Fructosyltransferases

  • The C-terminally truncated inulosucrase (Inu∆699) of Lactobacillus reuteri strain 121 is an fructosyltransferase belonging to the glycoside hydrolase family 68. This enzyme synthesizes a high molecular weight β(2→1)- linked fructan polymer of > 10 MDa, and oligosaccharides (95 % 1-kestose and 5 % nystose) using sucrose as substrate.

    *Activity was measured by following the release of glucose from sucrose. One unit of enzyme activity is defined as the release of 1 μmol of glucose per minute.
  • The C-terminal truncated levansucrase (Lev∆773) of Lactobacillus reuteri strain 121 belongs to the glycoside hydrolase family 68. This enzyme synthesizes a linear levan polymer containing β(2→6)- linked fructan units, and a low amount (2-3 %) of branching β(1→2) points, using sucrose as substrate.
