The polysaccharide GtfA reuteran is a unique, soluble glucan produced from sucrose by the glucansucrase GtfA-ΔN of Lactobacillus reuteri 121. The brached structure contains mainly α(1→4) and α(1→6) glucosidic linkages, with no repeating units present. The production of glucans using Lacotobacillus reuteri strains is Generally Recognized as Safe (GRAS), and the compound has potential prebiotic properties.
