The exopolysaccharide Gtf180 dextran is produced using glucose by the glucansucrase of Lactobaccillus reuteri 180. The heavily branched α-D-glucan has a heterogeneous structure containing (α1→3) and (α1→6) glucosidic linkages with no repeating units present. The terminal positions only carries -α-D-Glcp-(α1→6) units, whether all the -α-D-Glcp-(α1→3)- units are 6-substituted. The polysaccharide is formed from different isomalto-oligosaccharides (IMMO), connected by single (α1→3) bridges in linear and branched orientations.
