The polysaccharide GtfO-∆N reuteran is a soluble glucan produced from sucrose by the glucansucrase GtfO of Lactobacillus reuteri ATCC 55730 (LB BIO). The brached structure contains mainly α(1→4) and α(1→6) glycosidic linkages, without repeating units present. The polymer contains a large amount of α(1→4) linkages (~80 %). The production of glucans using Lacotobacillus reuteri strains is Generally Recognized as Safe (GRAS), and the compound has potential prebiotic properties.
