From 2016 to 2020, CarbExplore partnered with Nestlé, the University of Groningen, and Purdue University to advance enzyme technology and develop functional carbohydrates with significant health benefits. This collaboration resulted in innovative solutions that contribute to healthier food products and align with the growing demand for clean-label, sustainable ingredients.
The primary goal of the project was to develop new α-glucans with improved digestion properties, leading to an extended postprandial glycemic response and reduced blood glucose peaks. By slowing down carbohydrate digestion, these innovations support better blood sugar management—an essential factor in promoting metabolic health.
CarbExplore applied its expertise in carbohydrate modification and carbohydrate-active enzymes to screen and identify promising enzyme candidates from Nestlé’s private culture collection. These enzymes were produced, characterized, and evaluated for their ability to generate α-glucans with slow digestibility properties. The research involved:
Screening and characterizing novel enzymes
Producing and testing modified starches for digestion rates
Validating findings through human clinical trials
Discovery of four novel α-glucanotransferases (2 GtfB and 2 GtfD enzymes)
Development of modified starches that exhibited slow digestibility in in vitro studies, later confirmed in human trials
Publication of seven peer-reviewed articles in high-impact scientific journals
Securing three active patents to protect this innovative technology
This successful collaboration reinforced Nestlé’s mission to develop plant-based, sustainable food solutions while positioning CarbExplore as a key innovator in biotechnology-driven ingredient development.
