The polysaccharide GtfA reuteran is a unique, soluble glucan produced from sucrose by the glucansucrase GtfA-ΔN of Lactobacillus reuteri strain 121. The branched structure contains mainly α(1→4) and α(1→6) glucosidic linkages, with no repeating units present. The production of glucans using lactic acid bacteria is Generally Recognized as Safe (GRAS), and the compounds have potential prebiotic properties.
