Reuteran polysaccharide produced by GtfO-ΔN of Lactobacillus reuteri ATCC 55730
The polysaccharide GtfO-∆N reuteran is a soluble glucan produced from sucrose by the glucansucrase GtfO of Lactobacillus reuteri ATCC 55730 (LB BIO). The branched structure contains mainly 79 % α(1→4) and a minor amount of 21 % α(1→6) glycosidic linkages, without repeating units present. The production of glucans using lactic acid bacteria is Generally Recognized as Safe (GRAS), and the compounds have potential prebiotic properties.
