This mutan-like polysaccharide is formed using sucrose by the glucanotransferase GtfML1 of Lactobacillus reuteri strain ML1. The highly branched compound contains mainly α(1→3) and a minor amount of α(1→6) linkages, and is notably water-soluble. Glucans produced by glucanotransferase enzymes are potentially prebiotic, stimulating the gastrointestinal tract.
