Levan is a naturally occurring homopolymer of fructose. The C-terminal truncated levansucrase (Lev∆773) of Lactobacillus reuteri strain 121 forms two polymers, a fructan with a size of 0.02 MDa (97 %), and a longer polymer of 3-4 MDa (3 %). The linear polymers contain both β(2→6)- linked fructan units, and a low amount (2-3 %) of branching β(1→2) points.
