The C-terminally truncated inulosucrase (Inu∆699) of Lactobacillus reuteri strain 121 is an fructosyltransferase belonging to the glycoside hydrolase family 68. This enzyme synthesizes a high molecular weight β(2→1)- linked fructan polymer of > 10 MDa, and oligosaccharides (95 % 1-kestose and 5 % nystose) using sucrose as substrate.

*Activity was measured by following the release of glucose from sucrose. One unit of enzyme activity is defined as the release of 1 μmol of glucose per minute.
