Fructo-oligosaccharides

The C-terminally truncated inulosucrase (Inu∆699) of Lactobacillus reuteri strain 121 is a fructosyltransferase belonging to the glycoside hydrolase family 68. This enzyme synthesizes high molecular weight inulin of > 10 MDa, and a broad range of fructo-oligosaccharides (FOS) using sucrose as starting material. The branched homopolymer contains mainly β(2→1)-, and  5-7 % β(2→6) glycosidic linkages. HPAEC-PAD analysis was used to examine the FOS products in the mixture, detecting oligosaccharides with a degree of polymerization (dp) up to 15. The main transglycosylation products include 1-kestose (GF2), 1,1-nystose (GF3), and a minor amount of 1,1,1-Kestopentaose (GF4). The FOS compounds contain ß(2→1) linked fructsyl units.
