The exopolysaccharide Gtf180 dextran is produced by the glucansucrase of Lactobaccillus reuteri 180 using sucrose as substrate. The heavily branched α-D-glucan has a heterogeneous structure containing α(1→6) and α(1→3) glucosidic linkages without repeating units present. The terminal positions only carries -α-D-Glcp-(1→6) units, whether all the -α-D-Glcp-α(1→3)- units are 6-substituted. The polysaccharide is constructed out of different isomalto-oligosaccharides (IMO) structures, connected by single α(1→3) bridges in linear and branched orientations.
