The C-terminally truncated inulosucrase (Inu∆699) of Lactobacillus reuteri strain 121 synthesizes a high molecular weight fructan polymer of > 10 MDa, and fructo-oligosaccharides (FOS), using sucrose as starting material. The branched homopolymer contains mainly β(2→1)-, and  5-7 % β(2→1) glycosidic linkages.
