Novel enzymes for prebiotic polysaccharides
The use of functional polysaccharides offers a new approach for food industry to reduce health risks and to prevent diseases that are resulting from a Western-style diet, such as diabetes and obesity. Functional polysaccharides are used as a replacement for fat and regular food ingredients such as starches.
CarbExplore Research is developing novel polysaccharides that are slowly digested in the body, have a reduced glycemic index, and have prebiotic properties. To enable the manufacture of such healthy polysaccharides, CarbExplore Research develops enzymes that selectively produce the desired products. The developed polysaccharides are screened for their prebiotic effect and health benefits. The novel products will ultimately contribute to improved health and healthy ageing.
